Cajun Chicken and Peppers

Serve this Cajun-inspired chicken dish over a bed of rice for a hearty and delicious meal that’s easy to make.

Serves 3 to 4

  • 1 lb boneless, skinless chicken breast, cut into 1 ½ inch (7 cm) pieces
  • 1 onion, chopped
  • 1 green or red bell pepper, chopped
  • 1 tablespoon vegetable oil
  • 1 tablespoon barbecue sauce
  • 1 teaspoon each: paprika and garlic powder
  • ½ teaspoon each: dried thyme leaves, dried oregano leaves, cayenne, salt and pepper
  • 1 Ready. Chef. Go!® Microwave and Oven Steam Cooking Bag

If using the oven, preheat the oven to 400°F (204°C). In a large bowl, combine the chicken, onion, bell pepper and oil, and then toss to coat evenly. Add the barbecue sauce and toss to coat evenly. In a small bowl, combine all the seasonings, sprinkle over the chicken and peppers, and then toss again. Place everything in an even layer in a Ready. Chef. Go!® cooking bag on a rimmed baking sheet. Seal the bag. Bake for 20 minutes or microwave for 6 minutes or until the chicken and vegetables are tender. Open the bag and let the food stand a few minutes to cool. Serve as is or on top of a bed of rice.
