Kona Chicken Kabobs | Ready Chef Go Bags

Serves 2-3

Skewers:

  • 2 skinless chicken breasts, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 sweet onion, peeled and quartered
  • 6-8 small portabella mushrooms
  • 1 can of pineapple chunks – reserve the juice and set aside
  • Bamboo skewers

Sauce:

  • ¾ cup of reserved pineapple juice
  • ¼ cup of teriyaki sauce
  • 1 teaspoon of crushed garlic
  • 2 tablespoons of cornstarch

Using a small mixing bowl, mix the pineapple juice, teriyaki sauce, garlic and cornstarch. Thread the chicken, peppers, zucchini, onion, mushroom and pineapple to the skewers, leaving a small space between each item. Place the skewers in a Ready. Chef. Go!® cooking bag and pour the sauce on top. Seal the bag.

Microwave at full power for 5 to 6 minutes or cook for 20 to 25 minutes in the oven at 350°F.
