Skewers:
- 2 skinless chicken breasts, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium zucchini, sliced
- 1 sweet onion, peeled and quartered
- 6-8 small portabella mushrooms
- 1 can of pineapple chunks – reserve the juice and set aside
