BBQ Mexican Corn

This quick, healthy, vegetarian-friendly side dish can be put together from start to finish in as little as 20 minutes.

Serves 2 ears per bag

  • 2 Ears of Corn, husked
  • Small Skewers or Large Cocktail Picks (I used Japanese wagashi skewers)
  • 1 Lime
  • 1 Small Orange or Lemon
  • 1 ½ Tbs Sour Cream, Crema or Mayo (I used sour cream)
  • ½ Cup Cotija Cheese
  • 1 ½ Tsp Mexican Spice Blend (Everson
  • (Opt) 2 Oregano Sprigs
  • 1 Ready. Chef. Go!® Oven and Grilling Bag

    Cut the stem ends off the corn and insert skewers into the cut in. Cut the citrus in half. Pound them in deeply so they are fully secure. Brush the sour cream all over the corn. Press the cotija cheese onto the top. Sprinkle with Mexi Spice Blend. Load two ears of corn into each bag and add the citrus some cut side up, some down. Place the oregano sprigs on top of the cheese spice mixture if using. Seal the bags.

    COOKING INSTRUCTIONS: BBQ over indirect heat or roast in a 450 oven for 15 to 20 mins. Let rest 3 mins before opening the bags. Garnish with the grilled citrus from the bags, squeeze all over the corn cobs. ¡Delicioso!
