BBQ Tropical Wild Caught Sea Scallops

This quick and healthy seafood dish can be put together from start to finish in less than 10 minutes.

2 Servings Per Bag

  • 4-5 Oz Sea Scallops (3 to 6)
  • 6 Oz Pineapple slices
  • 6 Oz Mango, large diced
  • 8 Small Red Onion Rings
  • 2 Oz Shishito Peppers, or sweet baby peppers
  • One 1 1/2 Tbs Favorite Spice Blend*
  • 2 Tbs EVOO

*I used Everson Sesame Ginger Marinade spice, but try others from Everson Spice http://www.eversonspice.com/seasoning-sprinkles-and-dry-rubs.html

Dip one flat side of each scallop in the spice blend of choice and set aside, spice side up. Load all pineapple, mango, onion, and shishito into a Ready. Chef. Go! grilling bag and arrange attractively. Drizzle in EVOO. Top with scallops and seal the bag.

Grill: BBQ on an open grill foil side down until scallops are cooked to your liking

Oven: Roast in a preheated oven at 450°F for 6 to 10 minutes.

Let rest 1 minute before opening the bag. Garnish with fresh lettuce cups and roasted citrus fruits. Follow all instructions printed on the Ready. Chef. Go! Grilling bag.
