Granola Baked Apples

 For a great desert that can be prepared in a matter of minutes, it's tough to beat these Granola Baked Apples. Combine them with Ice Cream, Sorbet, whipped coconut milk or cream for your next dinner party or just a delicious treat!

  • 2 medium apples (Pink Lady apples pictured)
  • ⅓ cup of your favorite granola (honey multigrain granola pictured)
  • ¼ cup of your favorite dried fruit (golden raisins pictured)
  • ¼ cup of your favorite seeds or nuts (pepitas seeds pictured)
  • ¼ cup of sweetened condensed coconut milk
  • 1 small citrus fruit, juice and zest (Meyer lemon used in picture)
  • Shaved chocolate for garnish
  • 1 Ready. Chef. Go!® Microwave and Oven Steam Cooking Bag

Cut the apples in half and remove the center core (a melon baller works well for this). Arrange the four halves in a small baking dish and sprinkle with citrus zest. Top the apples lightly with nuts or seeds and your dried fruit of choice; you can either top the apples as shown in the photos or add more of the flavor toppings and create an apple crisp if you’d like. Add granola, more seeds and fruit, and then drizzle with the coconut milk. Squeeze the citrus juice over the top of the apples. Place the small baking dish with the apples in a Ready. Chef. Go!® Microwave and Oven Steam Cooking Bag and seal the bag.

Place the bag in your microwave and cook for 3 minutes at full power. Let the bag cool for about 30 seconds to reduce the steam. Cut the bag open and be careful of hot steam. Remove the dish and garnish with shaved chocolate if you desire. This dish pairs great with sorbet, ice creams of all kinds, and whipped coconut milk or cream.
