Stir the brandied cherries into the simmered vegetable Hanukkah tzimmes. Add the tzimmes and cherry mix to the boxes. Top with the brown butter pearl onions. For the two-compartment tab box with insert, add the tzimmes to the large side and include another Hanukkah favorite such as a mushroom barley noodle kugel to the smaller side.
Conventional Oven: Bake the tab box in a 350-degree oven for 15 to18 minutes.
Microwave: Microwave for 2 to 4 minutes.
Let rest for 2 minutes before opening the boxes. Garnish with fresh citrus wedges and a quality blue cheese like Cropwell Bishop Creamer Blue Stilton
*Simmered Root Vegetable Tzimmes
2 Quarts Favorite Simmered Vegetables (rutabaga, celery root, rainbow carrots, fennel, parsnip, golden beets)
(Opt) 1 Large Purple Yam, roasted
2 Tbs Balsamic Vinegar
1 Tbs Citrus Juice (I used lime)
1 Tbs Mustard Seed Oil (or favorite flavored oil like citrus or roasted garlic infused evoo)
10 Ounces Frozen Dark Cherries, thawed
(Opt) 2 Tbs Fine Brandy or Cognac or Calvados
½ Tsp Sea Salt
¼ Tsp Black Pepper
Peel and slice all vegetables into bite-sized pieces. Simmer in lightly salted water until crisp and tender, strain, then cool. Combine with all the remaining ingredients and stir well.
NOTE: Save the cooking liquid for a flavorful broth to cook rice or potatoes or start a soup.
