Use kitchen scissors to cut through the shell of the lobsters from the head end to just shy of the tail. Peel and devein the shrimp leaving the tail on if desired, then lay them attractively along the back of each lobster tail. Load the lobster tails and shrimp into the box side by side.
Season the butter pats with a favorite salt/spice blend and tuck in between the shrimp. Add the blackberries as well as top with the pomegranate seeds. Quarter the beets and add them along with the radish slices around the sides of the artfully arranged adorned lobster tails. Close the tabbed box.
COOKING INSTRUCTIONS: Roast in a 350-degree oven for 15 minutes or microwave on high for 3½ mins, until hot and nicely steamed.
Let rest for 4 minutes before opening the box. To serve attractively, gently lift the cooked lobster through the slit in the shell and lay it on top, still attached at the tail. Garnish with fresh herbs like basil tips with blossoms.
