Red Love Beets Gnocchi

4 Ingredient Series

Serves 4

  • 1 Pound Gnocchi, fully cooked
  • 10 Ounces Love Beets, white wine & balsamic whole red beets
  • 10 Ounces Corn, cooked (I prefer organic canned corn for this application)
  • 3 Tbs Butter
  • Salt & Pepper

    Pouch bags. Roughly chop the red beets. To avoid staining fingers use a fork to hold the beets white you chop. See Video (below) for how to chop red beets using fork & knife. Stir the beets, gnocchi & corn together & load into bags.  Dot with butter in three large pats & sprinkle salt & pepper on butter for visual appeal.  Seal the bags.

    COOKING INSTRUCTIONS: Microwave on high for 5 mins or bake in a toaster or conventional oven for 25 mins.  Let rest 2 mins before opening the bag.  Garnish w/ fresh herbs & freshly grated hard cheese.

    NOTE:  Ready. Chef.
