Serves 1 boxed meal per tab lid oven + microwave box with 2 compartment insert

  • 6 Ounces Fried Catfish Filet 

  • 8 Ounces Viet Elephant Green Mango Slaw (w/ sweet bok choy, fried taro, golden chives, red onion, baby corn, eda mame & Vietamese coriander [aka: rau ram & laksa leaf])*** 

  • Favorite Sandwich Bread, single serving 

  • (Opt) 1 ½ Tbs Bo’ Viet Flavored Mayo** 

  • (Opt) 1.5 Ounces Fried Onion Rings 

RCG! Tab Lid Oven + Microwave Box with 2 compartment insert.  Fit the insert into the boxSpread Bo’ Viet flavored mayo on breadMake a sandwich w/ fried catfish filet & onion rings if using & put into the large compartment of the boxAdd the slaw to the other side and seal the boxes.

COOKING INSTRUCTIONS: Microwave for 1 ½ mins or bake in a 350 oven for 8 to 10 minsLet rest for 1 minute before opening the boxGarnish with edible petals & fresh summer fruit like organic dark juicy cherries.

***Viet Elephant Green Mango Slaw*** 

  • 8 Ounces Vegetable Slaw (I used Viet elephant green mango, sweet bok choy, fried taro, golden chives, red onion, baby corn, eda mame & Vietnamese coriander [aka: rau ram & laksa leaf]),  
  • 1 Tbs Viet Cajun Molasses Date Lime Glaze 

Julienne veggies into slaw shapes & textures, add baby corn & edamame.  Stir in glaze & mix well.  This gets better as it sits & will last for several days in boxes.   

**Bo’ Viet Flavored Mayo** 

  • ¾ Cup Mayo 
  • 2 Tbs Viet Cajun Molasses Date Lime Glaze 
  • 1 ½ Tsp Black Sesame Seeds 
  • (Opt) ½ Tsp Fresh Turmeric, microplane 
  • (Opt) 1 Tsp Dried Shredded Red Pepper  

Stir to combine, chill. 

*Viet Cajun Molasses Date Lime Glaze* 

  • 1 Tbs Molasses 
  • 1/3 Cup Date Syrup 
  • 1/3 Cup Ponzu 
  • 1/4 Cup Lime Juice, or lemon or sour orange 
  • 1/3 Cup Dry or Sweet Marsala or Grape Juice 
  • 2 Tbs Miso or Doenjang 
  • 1 Tsp Fresh Ginger, microplane 

Simmer 8 to 10 mins until glossy and slightly thickened.  Yield about ¾ Cup.
