3 Bean Lettuce Wraps

This quick, healthy, vegetarian and vegan-friendly dish can be put together from start to finish in as little as 5 minutes.

Time: 5 to 25 mins

1 to 2 Servings

  • ½ cup of Garbanzo Beans
  • ½ cup of White Beans
  • 1 cup of Green Beans, raw, cooked or frozen
  • ⅛ cup of shallot or scallions, thinly sliced
  • ¼ cup of walnuts
  • ⅓ cup of your favorite dressing (creamy herb Caesar pictured)
  • Fresh lettuce leaves

In a mixing bowl, mix together the shallot, Garbanzo beans, White beans, Green beans, and Walnuts with the dressing. Once thoroughly mixed, put the mixture in a Ready. Chef. Go!® bag and seal it.

Conventional Oven: Preheat the oven to 400° F. Place the bag on a baking sheet and cook for 15 to 20 minutes.

Microwave: Place the bag on a microwave-safe dish and cook on high for 2 to 3 minutes.

Let the bag cool for 1 to 2 minutes and then cut it open and plate the meal to serve. Garnish with seeds and serve with the fresh lettuce leaves.
