Generously Serves 2

  • 12 ounces of your favorite fresh pasta
  • 1 tablespoon of extra virgin olive oil
  • 2 tablespoons of butter, sliced
  • ¼ tablespoon of salt
  • ¼ tablespoon of black pepper
  • ½ cup of dry vermouth or white wine
  • ½ cup of water
  • ½ cup of shallots, thin ring slices
  • 1¼ lbs of fresh mussels, sustainable preferred
  • 1 medium lemon, juice & zest
  • ¼ – ⅓ cup of one (or a mix) of the following fresh herbs for garnish: basil, parsley, tarragon, arugula, or lemon balm
  • Chili peppers, to taste (Optional)
  • 1 Ready. Chef. Go!® Microwave and Oven Steam Cooking Bag

Wash the mussels thoroughly in plenty of clean water and discard any with cracked shells. Tap any mussels that are open and see if they close. Discard any that do not. Load the pasta, extra virgin olive oil, butter, salt, pepper, vermouth/white wine and water into a Ready. Chef. Go!® bag. Seal the bag and microwave for 3 minutes.

Let the bag sit for a minute and then open it carefully, being mindful of the steam. Fluff the pasta with two forks. If you are unable to reseal the bag, re-portion the cooked food into a new Ready. Chef. Go!® bag. Add in the shallots, mussels, lemon zest, and optional chili peppers. Close and seal the bag and microwave for 4 to 5 more minutes.

Wait a full minute for the bag to cool before opening. Pour out the pasta onto a serving dish and garnish with fresh herbs and lemon wedges. If you grow your own herbs or visit farmers markets, garnish with fresh basil blossoms or other fragrant petals.
